Apple Cinnamon Jaffles

One of mine and Hubby's favourite and quick desserts is Apple Jaffles with Ice cream.



After seeing a chef on tv make sweet jaffles, I was intrigued and thought I would create one. Here's what creation I came up with.

Ingredients:
1 Pastry sheet, cut into quarters
Tinned Apples 
Cinnamon Sugar 
Ice Cream

Instructions:
Cut the sheet of pastry into quarters.
Place 2 quarters on the jaffle maker (It cost me $7 at Kmart!)
Spoon apple onto each slice of pastry.
Sprinkle with cinnamon sugar.
Cover with the last 2 slices of pastry and cook.





Serve with Ice cream, sprinkled with cinnamon sugar
and Enjoy!

And that's it folks. A yummy, quick, easy and cheap dessert!

Cinnamon Honey butter

Are you ready for this sinfully delicious recipe?? Apologies to anyone trying to loose weight! This is just deliciously naughty. And it doesn't help that it's so quick to whip up.
So what it is?? It is Cinnamon honey butter!!! For all my American readers, this recipe is probably not new to you, but we don't have anything like it in Australia! I love cinnamon toast, so this is just like a pre-made spread but with honey as well.

Here's the recipe:
1 stick of butter 
1/2 cup castor sugar
1/2 cup honey
1 tsp cinnamon.

Throw it all in a mixer and mix till soft. 

Store in a container in the fridge and spread on hot toast, fresh bread or whatever else you can think of.

And most of all, enjoy every bit of it!!!

Lunch Wraps



One of my favourite lunches ever! I have recently re-discovered Lebanese wraps and am loving them. This is one of my favourite ways to have them for lunch. 
Spread Cottage Cheese over the wrap. Then spread BBQ sauce over the wrap (yes I love BBQ sauce, but this isn't needed to make this delicious).



 3 Slices of ham, 3 Slices of tomato and lettuce down the middle of the wrap.

 Add 2 slices of Cheese. Use whatever cheese you love. Unlike most people, I actually love what I call "plastic cheese". I love the way it melts!
 Wrap up and put it a sandwich press and toast for a few minutes.
 The Lebanese wrap comes out perfectly crispy with melted cheese throughout.....yummo! Perfect Combination.

Anzac Day Activities

Tomorrow is Anzac Day. A day where we stop to remember the sacrifice of those who fought to make our country what it is today. In light of this, I thought I would do a little post with some activities that you might like to do with your kiddies.

Melted Crayon Canvas

So I've said before how much I love Pinterest. And given that I love saving money and DIYing, I therefore love trying projects out. I always feel like Pinterest makes every project look really easy, but lets face it sometimes they are just not as easy as the seem. Like my latest project. Have you ever seen the melted crayon canvas project. You know the one where you melt crayons onto a canvas with a hairdryer?? How could this possibly go wrong right?? Wrong!! I must say that the outcome I do love and it was fun but super messy and definitely not enjoyable to clean up afterwards. As your melting the crayons, they splatter onto everything. Here's what my hands looked like at the end...

It was also all over our table, one of our dining chairs and all over my shirt.
 But I love the way it looks!

And here it is hanging in my study...a bit of colour in that room finally!



So my advice would be, If you are going to try this yourself, put on some old clothes, drag an extension cord outside and do it on the grass. Your hands will still get dirty but they are the easiest thing to clean afterwards. It's fun to make and dirt cheap! The cost of the project was less than $5...that's my type of bargain!

Chore/Reward charts

Hello on this cold & rainy day.
Well today is the last day of the School Holidays here and I’m pretty keen to get the family into more of a routine this term. As part of our routine, I am wanting to start a rewards chart, that focuses on both chores and attitude.  I have tried lots of different reward systems before, but we haven’t had charts for a while.

This free printable chore/reward chart from The Glided Pear is awesome. There are 3 different colour combo’s and the chore section is blank so you can personalise it. I just printed them out for my kidlets.

Impossible Pie & Salad

Dinner last night was Impossible Pie. This is one of the easiest, cheapest meals that you will ever cook. And i love it! 
Here is the recipe

Ingredients
  • 3 eggs
  • 55g butter, melted
  • 1 1/4 cup milk
  • 3/4 cup self-raising flour
  • 1/2 cup cheese grated
  • 1 onion diced
  • 3 slices bacon, diced
  • 1/2 capsicum, diced
  • 1/4 cup mushrooms, sliced
  • (note: you can mix up the last 4 ingredients and add whatever you like to the pie)
  • Instructions:
  • Turn on oven to 160 degrees
  • Lightly brown bacon, capsicum, onion & mushrooms in pan.
  • Mix together milk, self raising flour, butter & cheese in a bowl and lightly wisk. 
  • Add browned bacon, mushrooms, onion & capsicum to the bowl.
  • Stir and pour into pie dish.
  • Bake for 40mins
Serve with a green salad and enjoy!

I have never really been a fan of spending money on a birthday card. I would rather spend the extra money on the present and have a cheap card that had a personal sentimental message from the gift giver. Roast Chicken and Baked Vegtables.

Hello, 
Last night we had Roast Chicken and baked vegetables. I cooked one of those delicious steggles chickens that I got on sale for $2.66! Baked it on 190 degrees for about 1 hour & 40 mins. We had baked pumpkin, potato & sweet potato. I laid it out on a tray & drizzled some oil over it and baked for an hour, turning after 1/2 hour. I also steamed some peas in the microwave and made some instant gravy. Super cheap meal. There's enough meat left over for my homemade pizza's and southwest chicken casserole and all for $2.66! Love it! We were going to use the leftover tonight for the casserole but ended up staying at my sisters for dinner, so I will just freeze it for when we need it. 
Got to love a good old fashioned baked dinner! Even better when the total cost was around $3.50! These chickens are the perfect example of why I set my budget over the month/year and not per week. It's great to stock up on things when you get them on a super good deal.

Asian Beef Stir-fry

Good evening,

Well at 2pm today, I realised that I hadn't taken the chicken out of the freezer for dinner. So tonight I switched to Wednesday night on the meal plan and made Asian beef stir-fry. I have made plenty of stir-fry's in my time, but I have never really followed a recipe, until now that is. I found this recipe on Pinterest.

I switched up a few things in the recipe as I didn't have all the ingredients. I used fish sauce instead of oyster sauce, chinese cooking wine instead of rice wine and I used normal salt instead of kosher salt.
Note: 1 pound equates to 453g of beef.
Also don't forget to put the rice on to go with it. I had to keep ours simmering on the stove while I waited for the rice to cook...oops!

But all up it was another great new recipe that I hope you can enjoy also.

Kid's playroom

I'm so excited that the kids playroom is finally starting to come together. I just scooped up this perfect craft/eating table for the kidlets for $40. I wanted one that miss 7 could still sit at, so I did all my research re table heights and the found this one on Facebook.
It's a solid wood dining table that has had the legs cut down, making it the perfect height for what I needed. I have seriously searched high & low for the perfect height table, so I am stoked!

 The reading nook has also finally been started! The material has been hung. Just need a matching shelf and some better cushions (and books of course!) and it will be a reading nook fit for a princess. 
Not long now and it will be all done! This mumma is excited! 

Mince Chow Mein

Hello,

We had a bit of a crazy night last night, so my beautiful sister in law (who happened to drop in at the perfect time) cooked our meal from the meal plan for us. Thankful for the blessing of her being here when she was.
Last night we had mince chow mein. I love trying out new recipe bases and this is one from Maggi. 


Here’s a pic of our dinner made. Sorry about the terrible pic. I was trying to take the photo on the kids lounge, whilst holding a very distressed little Mia.



And here’s the recipe:
Ingredients:
1 Packet Maggi 2 minute noodles ( I used 2 packets)
400g Lean minced beef
1 onion, sliced
3 cups (240g) cabbage, sliced
4 cups (400g) mixed vegetables – you can either use fresh or frozen. I used frozen.
1 mince chow mein recipe base
Instructions:
Cook 2 minute noodles according to packet, without adding flavouring.
Heat 1 Tbsp oil in a large wok, add mince. Once browned, add vegetables.
Add Recipe base & 1 cup of water, bring to the boil and stir through the noodles.

And that’s it!

Chicken Pot Pie

Good evening lovely people,
One great thing about writing this blog is that it is actually making me enthusiastic about trying out different recipes. Combine that with my obsession of Pinterest and all of a sudden I have a million recipes I want to try. So tonight was Chicken Pot Pie. I have never cooked this before and if you haven’t, you really should. It was seriously delicious!! The recipe makes enough filling for 2 pies. If you only want to make one pie at a time, just divide the filing once it’s cooked and freeze it. You can use any pie base that you want. I had a miserable baby tonight, so I just used puff pastry but I’m keen to make the pastry myself next time.

Meal Plan for the next month

Good evening lovelies,

After my grocery budget blog, some people asked me for my meal plan. So below is a copy of my meal plan for the next month. As said in the last post, I generally do a 2 week meal plan & then repeat it for the 2nd fortnight. There is no reason you have to do this. It doesn't necessarily save you any money, but my brain doesn't like to have to think up 30 dinners at one time, so I just find it easier.
So here it is!

Friday 10th – Chicken Pot Pie
Sat 11th – Mince Chow Mien
Sun 12th – Church
Mon 13th – Roast Chicken & Vegetables
Tues 14th – Southwest Chicken casserole
Wed 15th – Asian beef Stir-fry
Thurs 16th – Impossible pie & salad
Fri 17th – Homemade Pizza’s 
Sat 18th – Chicken Nuggets & Chips 
Sun 19th – Church
Mon 20th – Sausages & Vegetables
Tues 21st – Slow Cooker honey Garlic Chicken

REPEAT

On Sunday’s we have dinner after Church. Someone cooks for everyone and we pay $2 a person to eat. So that’s $8 for us and although I don’t cook, this is still included in our grocery budget.
Each Night over the next 2 weeks, I will post a photo & the recipe of the meal I have just made so you can cook it if you like as wellJ

My Easter Rocky Road

Here's the recipe for my rocky road. Enjoy:)

1 x 375g bag of Nestle Chocolate melts
1 x bag of snakes
1 x bag of mini marshmellows
½ cup of peanuts (or any other type nut)
Chop the snakes into small pieces
Melt the cholcolate in large bowl in the microwave on high for 1 minute and then stir.
Pour the snakes, marshmellows and peanuts into the melted chocolate & stir.
Pour the mixture into a small baking dish and refrigerate. You can leave it in as long as you want but you will be able to cut into pieces after 20 minutes.


You can really put any type of lollies or nuts into the mixture. No need to use expensive snakes. I bought mine from the reject shop and everything else I bought when it was on sale. The peanuts i got out of a fruit & nut mix that I already had at home.
Try it out. It was super yummy.

45 minute Yeast Rolls

Goodmorning,
Finally, here is the recipe for the rolls I made the other day.  They are easy and cheap to make. I must admit, they were completely different from what I was expecting. I saw the recipe and thought that they would be your typical light & fluffy rolls. They were heavy & dense looking , so I thought I had cooked them wrong, but they were delicious!!! Perfect as a snack on their own with some butter, or would go perfect with a soup, stew or slow cooked meal. 45 Minute Yeast Rolls

1 Cup + 2 Tbsp warm water
1/3 Cup oil
2 Tbsp active dry yeast
1/4 Cup sugar
1 1/2 tsp salt
1 egg
3 1/2 Cup bread flour 

 Preheat oven to 205 degrees
 In bowl, mix water, oil, yeast and sugar.
 Let rest for 15 minutes.  
Mix in salt, egg and flour. Knead until soft and smooth. 
Form into 12 balls and place onto 9×13 greased baking dish.
Allow to rise for 10 minutes.
Bake for 15 minutes or until golden brown.

How I keep my shopping budget to a minimum


I have had a few people ask me (from my 1st blog post)how I keep my grocery bill so low. So today I’m writing about a few of the tips that help me.

Firstly, something that you need remember when looking at your shopping budget, is that every family is different. I have often read articles on how little a family spends on their shopping and think, why can’t I get mine down that low. Families come in all different shapes & sizes. Some are large families, some are small. Some families eat a lot, some don’t. Some families have foods that they need to avoid, others don’t. Whatever your situation, don’t compare yourself to other families; instead consider where you could cut down in your budget.  At the moment, we have a shopping budget of $5200 a year ($100 a week). This is very achievable for our family. When our 3rd bubba starts eating, that budget might raise a little. For my sister, she has a bigger family, with some food allergies, which means they have to avoid some foods. Not to mention the fact that they also have 2 in nappies. With all of this, they still manage to stick to a budget of $150 a week.  Although she spends more $$, I think that shows that she is actually doing a lot better than me at getting the most out of her shopping budget. 

So here are some tips as to how I keep our shopping budget down low.
1) I make a meal plan – I create a fortnightly meal plan and then repeat it for the 2nd fortnight in the month. I will often try to plan foods that have overlapping ingredients. By doing this I minimise waste (and yes trust me, I can still manage to waste food even on a small budget).

2) I shop monthly – I try to do the majority of my shopping monthly and then keep some money in the budget to get top ups of fresh food during each week. 

3) I don’t stick to a $100 a week! – Although my budget allocates $100 a week, I do my budget over the month. That way I can buy in bulk or if I find an extra great sale, I have money to stock up on it.

4) I shop at Aldi – I do most of my shopping at Aldi and only go to Woolworths if I need to buy a particular brand name item.  I know Aldi is more work and you have to pack your own bags, but the savings far outweigh the work. I love Aldi and am very thankful to be able to save so much money by shopping there.

5) I shop at my local fresh fruit market for fruit & vegies – We have this fantastic fruit market close by that does fruit & veggie boxes. You tell them how much you want to spend and they get a box, walk you around filling it up and tell you when you get close to your budget. They don’t weigh anything which means you get a great bargain, great fresh food and a chance to support local even on a limited budget. Not to mention the fact that they even walk it to your car for you....fantastic service!

6) I have stopped buying soft drink and limit our junk food – When you are addicted to something, it’s easy to spend money without thinking anything of it. I now drink mainly water which is much better for my health and have limited the processed junk food that I buy. This of course doesn't mean we don’t eat junk (you will know this if you saw my post on the 100+ cookies recipe) but I found that our family struggles with temptation and we are trying to loose weight, so not having much  processed junk  in our house is the best option  for us and heaps cheaper.

7) I’m trying not to buy take out – It is easy to forget that take out still falls into your budget when you don’t buy it at the supermarket. I once read an article where a lady said that they don’t buy takeout because if she is going to spend money on it then she would rather take her family out for a lovely dinner outing and not have to do the dishes after woods. This makes so much sense!!! So with this in mind I have decided to make freezer meals that we can grab out and eat when we are exhausted or having a really lazy night. This is something that I haven’t done yet, but is my plan for this month.
